When the boys were small I used to make a lot of traybakes.
They are ideal for large numbers … for parties, bazaars, coffee mornings and school fetes.
I purchased the perfect traybake tin 12 X 9 in so it can be made quickly, then simply cut it into squares or bars.
My Beloved cake book has a whole chapter dedicated to traybakes.
Yesterday I decided I would make one as a surprise for a friends birthday.
Deciding which one to make was the hardest bit but I decided on a Gingerbread traybake.
It turned out really well and tasted as good as it looked.
My friend must have really liked it as she took it home with her, much to Geoff’s disappointment.
But I have another 12 Traybake recipes so I am sure Geoff wont be disappointed for long 🙂

Where did you buy your tray bake tin please? I can’t find a 12 x 9 one anywhere and I want to make the Mary Berry traybake cakes.
I have the very same Mary Berry cake recipe book, although I must admit it’s been ages since I’ve baked anything, but when I did I found her recipes to be perfect, I never once had a failure!

Traybake. That’s an expression I have never heard before. And here that cake pan size is 13 x 9 inches. I used to make a lot of them but now they are too large for a family of 2 and besides I should not be eating cakes on a regular basis.
I am rather partial to gingerbread cake, I can almost taste it 🙂
