Double Chocolate…..Cranberry and Nut…..Cheese and onion.
After what jmb said in my comments here I did not spray my silicone tray with oil…. not a good idea as they all stuck :-( but boys still enjoyed eating them 🙂
Since I made some muffin’s.
So today I decided it was time to try my new silicone muffin tray out.
No liners required it says but I was wary, as my last attempt at using no liner ended in disaster.
To be on the safe side I decided to use liners for half the muffin’s , the other half I just sprayed the cups with oil and added the mixture straight into the cup.
The results were great and the silicone tray is totally non-stick.
Wanted to make lemon and poppy seed…. but had no poppy seed’s so made nut and cranberry instead , results…… totally delish
Like most people, after Christmas I always have a few extra Lbs I need to loose.
Not helped, this year by my week in Les Gets and all those Vin Chaud’s to keep me warm on the slopes.
I didn’t feel I needed to go back to slimming world, as I was in the right frame of mind to do it on my own.
So I decided I would go back to an old favorite of mine, who just happened to have a new book out.
For almost a week now I have been following Rosemary Conley’s GI Hip and Thigh Diet its been easy and I have lost 2lb so far.
Her book has become my bible it goes everywhere with me.
It has 4 weeks of set daily menus if you want to follow them or sections on breakfast, lunch and dinners if you want to make your own daily menus.
It also has some great recipes to help you along.
One of my favorite recipes so far has been the Potato and Broccoli soup:-
1 red onion
115g of potato chopped
2 gloves of garlic
1.2 liters of veg stock
225g Broccoli
Place onion, potato and garlic in a saucepan pour in the vegetable stock bring to boil then simmer till potatoes are cooked.
Add Broccoli and cook till tender blend till smooth , season before serving.
This is enough for 4 servings…. but Matthew liked it so much he almost polished it all off in one go.
The book cost £3.49 from amazon , money well spent I think.
As my boys didn’t get to sample Emily’s Birthday cake, I thought I had better make them one 🙂
For anyone that may be interested its a coffee cake with a coffee and mascarpone cheese filling and topping.

Matthew helped me make it and the recipe came from a new baking book that Emily and Mark got me for Christmas, called Exceptional Cakes.
It was a huge success and Emily could not believe it was a home baked cake.
What better compliment could you get !!
Just before Christmas I was having a bit of a panic as I could not find my special nut roast recipe.
After much searching I gave up looking and decided to use another one that had been recommended to me.
As it is a weight watchers recipe I was unsure about how good the results would be.
I made it on Christmas eve ready to warm up the following day and I am glad to say the results were good.
So good that I was asked to make it again for A new years party we were going too.
